This recipe is quick and simple to put together. You make it once, and you'll have an instant snack throughout the week.
A delicious better-for-you snack.
Prepare a baking sheet lined with a silicone mat or parchment paper.
In a large bowl, add the oats, peanut butter, chocolate chips, honey and toasted coconut.
Using a spatula, stir until all ingredients come together and are well combined.
Using a cookie scoop (I used a #40), scoop mixture and make into ball. Place them on the prepare pan.
Place them in the refrigerator for about 20 minutes.
After 20 minutes, you are ready to enjoy!
To store, place them in an airtight container place them in the refrigerator for up to a week.
You can also place a few in a treat bag, and gift it!
You can also add other add-ins such as nuts, hempseeds, etc.
