Quick Energy Snack

  1. Prepare a baking sheet lined with a silicone mat or parchment paper. 

  2. In a large bowl, add the oats, peanut butter, chocolate chips, honey and toasted coconut.

  3. Using a spatula, stir until all ingredients come together and are well combined.

  4. Using a cookie scoop (I used a #40), scoop mixture and make into ball. Place them on the prepare pan.

    Each ball weighs approximately 1 oz / 30g.
  5. Place them in the refrigerator for about 20 minutes.

  6. After 20 minutes, you are ready to enjoy!

  7. To store, place them in an airtight container place them in the refrigerator for up to a week.

  8. You can also place a few in a treat bag, and gift it!

Note

You can also add other add-ins such as nuts, hempseeds, etc.
